Wild Rice with Meatless Meatballs

When I first made this dish, I used wild rice that I had harvested by hand the summer I was a wild rice intern in Wisconsin. Hand-harvested rice is best for the environment, though it can be hard to find and it might be more expensive. You can order hand-harvested rice from the White Earth Land Recovery Project, which supports the Ojibwe of the White Earth Reservation in Minnesota. Paddy-grown rice will work just as well, though, and can be found in most grocery stores.

rice:
1 cup wild rice
2 cups water
1 teaspoon powdered veggie base
1/2 yellow onion, diced
herbs of your choice
salt and pepper to taste

meatball sauce:
1/4 cup powdered veggie base
1/4 flour
1 tablespoon olive oil
1/2 cup water
8-10 veggie meatballs (I use Nate's)

Boil the water and veggie base and add add the rice. Return to a boil, then simmer on low for 30-40 minutes or until the rice puffs up. Toward the end add the onion and spices. When the rice has reached desired consistency, fluff it up with a fork. For the meatball sauce, combine the veggie base, flour, oil, and water in a saucepan and heat until thickened. Add the meatballs and stir until they are heated through. Top the wild rice with the meatball sauce and serve with a side of corn.
