Cheezy Sausage Scramble

This is a delicious and nutritious breakfast. The tofu (assuming it's fortified) provides calcium and iron, the nutrional yeast is loaded with B vitamins (including B12) and dietary fiber, the flax seed provides omega-3 fatty acids, and both the tofu and the sausage provide protein. For added deliciousness, make it into a sandwich with an English muffin and a slice of soy cheese. You can also easily double or quadruple the recipe.

1 teaspoon olive oil
1/4 large onion or 1/2 small onion, minced
1 clove garlic, minced
1/2 teaspoon all-purpose seasoning (or a mixture of your favorite seasonings)
1/4 teaspoon turmeric
1 teaspoon ground flax seed (optional)
1/4 box extra-firm tofu, drained
1 tablespoon nutritional yeast
3 oz Gimme Lean sausage (about a quarter tube) or other vegan sausage, crumbled

Heat the oil and fry the onions until tender, then add the garlic. Add the seasoning, turmeric, and flax, and add a splash of water and stir everything together. Add the tofu, crumbling it into bite-size chunks, and mix it into the spices until it's turned all yellow from the turmeric. Add the nutritional yeast and mix it with the tofu. Add the sausage and stir all together for a few minutes. Serve with toast or home fries.
