Vegan Meat Lover's Pizza

Pizza was my favorite food when I wasn't vegan, and it's nearly impossible to find casein-free soy cheese pizza at the store, so I made it my quest to create a delicious vegan version of America's favorite food. And just because we're vegan doesn't mean that we have to give up our favorite meaty pizza toppings. Though vegan cheese never has quite the right texture, vegan meat is usually a fairly good replica, so adding meat toppings increases your pizza's overall similarity to the non-vegan original. This recipe makes two 12-inch pizzas, so I usually bake one right away and freeze the other.

Pizza dough:
1 package active dry yeast
1 cup warm water
1 tablespoon sugar
1 tablespoon salt
2 tablespoons olive oil

Toppings:
1 tablespoon olive oil
1/2 cup tomato sauce (canned or homemade)
1 clove garlic, minced
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon rosemary
2 cups shredded soy cheese, mozzarella style (I use VeganRella; 1 package=2 cups)
4 oz. vegan sausage (I use Gimme Lean Sausage Style)
1 package vegan pepperoni

Mix the yeast with the water and let it sit while you get out the rest of the dough ingredients. Add the sugar, salt, and oil, and mix together until it's uniform. Dust a countertop with flour and knead the dough for ten minutes, keeping your work surface and hands dusted in flour so the dough doesn't stick. Form the dough into a ball. Line a bowl with olive oil and put the ball in, turning it to coat with oil. Cover the bowl with plastic wrap or a moistened towel and set it in a warm place to rise. Wait one hour or so (it should have about doubled) and punch the dough down to get the air out. Divide it into two pieces and stretch and toss them into pizza shape.

Sprinkle two pans with corn meal and lay out one dough on each. Brush them with olive oil. Mix together the tomato sauce, garlic, oregano, basil, and rosemary, and spread half on each pizza, then sprinkle the cheese on top. Crumble the sausage and fry it up until golden, and spread the pepperoni and sausage over both pizzas. Bake at 500 F for about 15 minutes or until the cheese melts.
