Nachos

1 tbsp olive oil
4 oz. (about 1/4 tube) Gimme Lean Ground Beef or other veggie beef
1 tablespoon taco mix
1 cup corn chips
1 cup grated vegan cheese, cheddar style

garnish:
soy sour cream
spring onions, diced

Fry the Gimme Lean in the oil and break it up into little pieces. Add the taco mix and a splash of water, stir, and cook until the water is absorbed. Spread out the chips on aluminum foil or an oven-safe plate and sprinkle the Gimme Lean and cheese over the chips. Bake at 400 F until the cheese melts (assuming it's a meltable brand). Garnish with the soy sour cream and spring onions.
