Seitan-Vegetable Lo Mein

2 cups lo mein style noodles

1 tablespoon canola oil
1 tablespoon sesame oil
1 teaspoon soy sauce
2 cloves garlic, minced
1 teaspoon minced ginger
1 head broccoli, chopped
2 spring onions, sliced

1 tablespoon hoisin sauce
2 ounces seitan (about 1 package), sliced thin

Cook the noodles al dente and drain off the water. Set aside. Heat the oil and soy sauce and add the garlic and ginger, and sautee for a minute. Add the broccoli and spring onions and stir fry for a few minutes, until crisp. Set aside the vegetables. Coat the seitan with the hoisin sauce and stir fry for a few minutes. Toss the vegetables and seitan with the noodles and serve.
