Seitan-Vegetable Lo Mein
2 cups lo mein style noodles Cook the noodles al dente and drain off the water. Set aside. Heat the oil and soy sauce and add the garlic and ginger, and sautee for a minute. Add the broccoli and spring onions and stir fry for a few minutes, until crisp. Set aside the vegetables. Coat the seitan with the hoisin sauce and stir fry for a few minutes. Toss the vegetables and seitan with the noodles and serve.
