Hummus

Hummus is one of the best vegan foods out there. It's healthy, tasty, and popular even with omnivores. There are endless variations on hummus, and this is how I like to make it.

1 can chickpeas, drained (save the water)
1/4 cup tahini
1/2 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic
1/2 teaspoon salt
1/2 teaspoon black pepper

Toss everything in a food processor and blend, adding back the chickpea water until it gets as creamy as you'd like it. Serve with raw veggies, toasted pita triangles, or baked corn chips.
