Rosemary Home Fried Potatoes

This simple recipe makes a great breakfast with veggie sausages or tofu scramble, or as a side dish at dinner. It can easily be doubled or tripled. Since the potatoes need be cooked ahead of time, I usually make it when I have left over cooked potatoes. This recipe works best with a non-stick pan.

1 tablespoon olive oil
1/4 large onion or 1/2 small onion, minced
1 clove garlic, minced
1 medium baking potato or several small potatoes, boiled and cubed
1 tablespoon rosemary
pinch sea salt

Heat the oil and fry the onions until tender, then add the garlic. Add the potatoes, rosemary, and salt and cook for a few minutes until the potatoes are slightly crisp.
