Peppermint Chocolate Pudding

Pudding is the ultimate comfort food, and I love combining mint and chocolate. ZenSoy makes a convenient vegan storebought pudding, but it doesn't compare to homemade. You can replace the peppermint with orange extract, coffee extract, or whatever other flavors you like with chocolate.

1 14-oz. package silken tofu
6 tablespoons unsweetened cocoa powder
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon peppermint extract
2 tablespoons vegetable oil

Blend all ingredients in a food processor, and chill for an hour. Makes about 4 servings.
