How It All Vegan! by Sarah Kramer & Tanya Barnard
This is an excellent book with lots of easy, simple, and tasty recipes. It's great for people like me who are new to cooking and shy away from complicated and time consuming recipes.
Vegan With a Vengeance by Isa Chandra Moskowitz
Isa is the host of the cable access show The Post Punk Kitchen, and this book compiles her best vegan recipes. All the ones I've tried so far have been delicious, and none of them are too complicated. Plus, recommended by Joan Jett, so you know it's good. Also check out the PPK website, which has more recipes and tips for vegan cooking.
The Vegetarian Family Cookbook by Nava Atlas
A vegetarian cookbook with many vegan recipes and suggestions for veganizing most of those that aren't. It's aimed at families, so it has good foods for picky eaters. It also has lots of great ideas for simple breakfasts, snacks, and packed lunches.
Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero
From the hosts of The Post Punk Kitchen comes this adorable little book filled with amazingly delicious and creative cupcake recipes. It starts with basic vanilla and chocolate recipes and continues with recipes like chai latte and mint chocolate, and includes many frosting and filling recipes, plus tips for making your cupcakes turn out perfectly. This is a must have for vegans with a sweet tooth.

Diet for a New America by John Robbins
This book covers the ethical, health, and environmental reasons for going vegetarian and vegan, with plenty of science backing it up. It's from 1986, so it's somewhat out of date, but much of the information is still accurate and very compelling.
Vegan: The New Ethics of Eating by Erik Marcus
An overview of the many reasons to be vegan, highlighting animal welfare and human health. A good short read that would convince anyone that veganism is the best diet. A free download of the book is available here.
Grub: Ideas for an Urban Organic Kitchen by Anna Lappé and Bryant Terry
This book is not specifically about veganism, but about the organic/locally grown food movement, and is a good resource for information on the history and modern state of organics and how to find locally grown food. There were some things I didn't like about this book, such as Bryant's little rant about how we should move on from labels like vegan, raw foodist, etc. And his recipes, where they were vegan, didn't really whet my appetite. But the first half of this book is very interesting and useful if you're into organic, locally-grown food.

Vegetarian Times
The oldest vegetarian magazine with the widest circulation, it has news, info, and recipes. Many of the recipes are vegan, and there's a helpful index at the back listing which recipes are egg- and dairy-free.
Veg News
Veg News is newer and more oriented toward vegans, and also includes news, info, and recipes.
The Abolitionist
Compassion Over Killing's free, copyleft newsletter, with news on their work in animal rights, as well as vegan recipes and other info.
